Hello Lovelies! Today, I'm going to share one of my all time favorite soup recipes - Oxtail Soup! Have you tried oxtail soup? It tastes utterly divine! Yes..... I know. This recipe can be laborious and time consuming to make, but I promise you it's well worth the effort. So what are you waiting for? Grab your apron and let's get busy!
Cook time : Approximately 4 hours and 30 mins
Prep time : 15 mins
Yield : serves 3-4
Ingredients :
1 1/4 pounds meaty oxtails
2 tablespoons olive oil
2 tablespoons coriander powder
1 tablespoon cumin powder
1 tablespoon fennel powder
2 tablespoons tomato puree
1 carrot, diced
2 large potatoes, peeled, cut into 1/2 inch cubes
2 stalks celery, chopped
Coriander leaves, chopped
1.5 liter water
Salt & black pepper
Ingredient A :
4 cardamoms
1 cinnamon stick
6 star anise
Ingredient B - Blended
10 small red onions
4 cloves of garlic
2 stalks lemon grass
1cm ginger
Instructions :
1. Boil the oxtail in the large pot approximately 3 hours until cooked, then
drain and put aside for later.
2. Heat 2 tablespoons olive oil in the large pot over medium heat. Saute
ingredients A & B until the aromas are released. Add coriander powder,
fennel powder & cumin powder. Stir in tomato puree for 5 minutes.
3. Add water and oxtails to pot. Cover and simmer 1 hour until meat is fork
tender. Add carrots and potatoes. Cover and simmer until carrots and
potatoes are tender. Add chopped coriander leaves, stir and season to
taste with salt and black pepper.
4. Ladle into bowls and serve the soup hot with baguette. Yum!
