Banchan - Korean Side Dishes Recipes

Hey Loves!

As promised, today I'm sharing the most easy-to-prepare and delicious Korean side dishes (BANCHAN) recipes!

Without further ado, let's jump into the RECIPES!

Green Onion Kimchi  (Pa Kimchi)

Ingredients: 
  • 350 - 400gram Scallions
  • 1/2  cup Gochugaru (Korean Chilli Powder)
  • 1 tbsp Sugar
  • 1/4 cup Boiled Water
  • 6 tbsp Fish Sauce
  • 1 tbsp Minced Garlic
  • Sesame Seeds
Method
  1. Wash and clean the green onions. Remove the roots and wilted or slimy parts. Wash them again thoroughly and shake off the excess water. 
  2. Mix all the seasoning ingredients (Gochugaru, Sugar, Fish Sauce, Minced Garlic and Boiled water.
  3. Rub the seasoning mixture all over each green onion. 
  4. Place the Pa Kimchi in a Tupperware and sprinkle with Sesame Seeds and then refrigerate. 
  5. Pa Kimchi can be eaten right away with plain rice. 

Spicy Cucumber (Oi Muchim)

Ingredients: 
  • 1 Korean Cucumber
  • 1 tbsp Gochugaru (Korean chilli powder)
  • 1/2 tsp minced garlic
  • 1/2 tsp salt
  • 1 tsp vinegar
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • 1 tsp Sesame Seeds
Method: 
  1. Slice the cucumber and mix well with salt. Set aside for 15 mins.
  2. Mix well with the rest of the ingredients and then refrigerate.

Seasoned Bean Sprouts (Kongnamul Muchim)

Ingredients: 
  • 200g blanched beansprouts (boiled with salt for 3-5 mins)
  • 2 tsp Gochugaru
  • 1 tsp minced garlic
  • 1 tsp sesame oil 
  • 1/2 tsp sesame seed
  • salt to taste
Method: 
  1. Easy peasy. Mix the blanched beansprouts and the rest of the ingredients well, and then refrigerate.

Korean Marinated Spinach (Sigeumchi Namul)

Ingredients: 
  • 250g Blanched Spinach (Boil with salt for 30 sec) 
  • 1 tsp sesame oil
  • 1 tsp soy sauce (I use sweet soya sauce)
  • 1 tsp minced garlic
  • 1/2 tsp sugar
  • 1 tsp sesame seeds
  • Salt to taste
Method: 
  1.  Mix the blanched spinach and the rest of the ingredients well, and then refrigerate.

Marinated Eggs (Mayak Gyeran)

Ingredients: 
  • 6 eggs 
  • 1/4 - 1/2 cup Honey
  • 1/2 cup Boiled Water
  • 1 tbsp Vinegar
  • 1 tsp Salt
  • 1 tbsp Minced Garlic
  • 1 Red Chilli (chopped)
  • 1 Stalk of Green Onions (chopped) 
  • 1/2 cup soy sauce
  • 1/2 tbsp Sesame seeds
Method: 
  1. Boil eggs with salt and vinegar for 6 minutes. 
  2. Put the boiled eggs in a bowl of ice water for 10 minutes
  3. While waiting, mix the rest of the ingredients well. 
  4. Peel the eggs and put them in the sauce mixture. Make sure the eggs are covered in the marinade.
  5. Refrigerate Mayaks overnight. Yummy!

Chicken Bulgogi (Dak Bulgogi)

Ingredients: 
  • 500g boneless thigh (cut cube)
  • 4 tbsp Kikkoman Bulgogi Sauce
  • 1/4 cup 7Up
  • 1 tsp Sesame Oil 
  • 1/2 tbsp Minced Garlic
Method: 
  1. Mix all ingredients well, and then refrigerate overnight.
  2. Grill the marinated chicken and serve with the rest of the side dishes, plain rice and sunny side up egg.
