Alce Nero Cooking Workshop with Ayam Brand & AMC Singapore


On Saturday morning, I attended Alce Nero Cooking Workshop hosted by Ayam Brand and AMC Singapore. It was fun and very informative!

So without further ado, let's jump right in, shall we?

THE COOKING WORKSHOP


The workshop began with a warm welcome and a brief introduction of the chefs (Annie Teo and Tan Lilian) by the host. After a brief introduction, the cooking demonstrations began immediately. The chefs demonstrated how to prepare the following recipes using AMC Cookware. Let's check 'em out!

STRAWBERRY CUPCAKE


STRAWBERRY CUPCAKE

Ingredients
125 grams butter
125 grams castor sugar
100 grams plain flour
1/2 teaspoon baking powder
2 eggs

Decoration 
100 grams whipped fresh cream
1 teaspoon Alce Nero Organic™ Strawberry Jam
12 pieces strawberry

AMC Products
1 24cm Unit 5.0l
1 Navigenio
1 Audiotherm

Cream butter and castor sugar together till white and fluffy. Add 1 egg and mix with the batter. Then beat in the 2nd egg till evenly mix. Add the  Alce Nero™ Organic Strawberry Jam and mix in the sieved flour with baking powder. Pour the mixture into small cupcake moulds. Prepare for baking.

Heat 24cm Unit 5.0l with No.4 until meat window. Put in the prepared cupcake. Over bake at '0' for 5 mins and switch to 'I' and bake for 10 mins. Cool aside. Refer to the demo for decoration. (See images above)

EGGPLANTS PESTO GENOVESE SALAD


EGGPLANTS PESTO GENOVESE SALAD

Ingredients
300 grams eggplants, cut it to half
8 pieces small tomatoes, cut the top part, dredged seed

Seasoning
2 tablespoons Alce Nero™ Organic Pesto Genovese
1 tablespoon Alce Nero™ Balsamic Vinegar of Modena
1 teaspoon garlic paste
1/2 teaspoon sugar
1/4 teaspoon salt

Topping
50 grams mozzarella cheese

ACM Products
28cm 4.0L Eurasia
Navigenio Audiotherm

Put the eggplants onto 28cm 4.0L Eurasia, skin facing down. Add 2 tablespoons water. Cover the unit. Put it onto the Navigenio. Set to A for Auto Pilot. Set 3 mins on Audiotherm and cook till vegetable window. When it beeps. switch off the heat.

When the eggplants cool down, dig out the flesh, add in seasoning to mix well. Fill the flesh into the tomatoes and top with some mozzarella cheese. Arrange the prepared tomatoes in the Eurasia. Place the Navigenio on top of the Eurasia. Set at No.2 and over bake for 5 mins till golden brown.

PEACH-BALSAMIC GRILLED CHICKEN THIGHS


PEACH-BALSAMIC GRILLED CHICKEN THIGHS

Ingredients
2 chicken thighs, de-boned
200 grams broccoli, cut into pieces
1 small carrot, sliced

Marinate chicken thighs for 20 mins
1 teaspoon mixed herbs
1/2 teaspoon salt

Seasoning for chicken thighs after 20 mins
1 tablespoon Alce Nero™ Organic Balsamic Vinegar of Modena
2 tablespoons Alce Nero™ Organic Peach Jam

AMC Products
24cm 2.5L Roaster
Navigenio Audiotherm

Put the 24cm 2.5L roaster onto the Navigenio. Set to No.4 to preheat till meat window. Put in the chicken thighs to seal and cover. Set the Audiotherm at vegetable window plus 3mins. When it beeps, turn the chicken thigh, and add in carrots & broccoli. Cover and cook till 90°C. Serve hot!

BAKED PENNE WITH PERFECT BAKES CHEESE



BAKED PENNE WITH PERFECT BAKES CHEESE

Ingredients
500grams Alce Nero™ Organic Penne
1 whole large onion, chopped
3 cloves garlic, chopped
190 grams Bacon bits
100 grams Baby Spinach
150 grams Perfect Bakes Cheese
1 pinch of crushed red pepper
1 pinch of paprika
1 teaspoon of sugar
700ml water
2 tablespoons of Alce Nero™ Extra Virgin Olive Oil
500 grams Alce Nero™ Organic Tomato Puree with Basil
Some salt to taste

AMC Products
24cm 5.0L unit
24cm Secuquick softline
Navigenio
Audiotherm

Place 24cm 5.0L unit on Navigenio. Turn to No. 6 and add olive oil, large onion, garlic and bacon. Fry till large onion is soften. Season with crushed red pepper, paprika and salt. Add penne, tomato puree, water and sugar. Mix evenly. Cover with Secuquick softline. Set the Navigenio at "A" automatic & Audiotherm at Turbo plus another 5 mins. Once Audiotherm beeps, press the button on Secuquick softline to release all the pressure in the pot after cook. Open lid, stir in baby spinach, sprinkle Perfect Bakes Cheese. Overturn Navigenio for baking mode, switch on level "II" and bake for 5 mins. Ready to serve hot.
